Baking – Vanilla Layer Cake!

    Hello! This is a new kind of post that I will hopefully be making more often! This is a post about a vanilla cake I recently made! I really love baking, and I hope to challenge myself with more recipies in the future.     This was the first layer cake that I have ever made, and I love how it turned out! I am really proud of this. Before this, I have only made cakes that were one layer and were not fully frosted. I know that I can improve a lot in my making of layer cakes, but this was a great first start.

     The reason I made this vanilla cake is because I recently went to Mexico and brought home a ton of vanilla extract. I want to actually bake things with this, since it is a really great quality, before it goes bad. I know that it won’t go bad for a while, but I really have a lot of vanilla and a lot of baked goods do not take that much vanilla.

     This particular vanilla cake took over a tablespoon of vanilla extract, so that excited me. Even though I will not be eating the cake, I love baking things for other people to enjoy. I have never really liked many baked goods such as cake, pie, muffins, pasteries, etc. The one baked good that I can say I do enjoy a lot is bread.

     When I was baking this cake, I took up the entire kitchen for a couple of hours since I only have one cake pan to bake the layers in. The recipe that I followed calls for three layers, and I only have one pan. While making the first layer, I put less than a third of the cake batter into it, so I ended up making four layers of equal size.

Here are the four accidental layers. I wish I had more frosting in between them to make it look more professional, but now I know for next time.

     Since I ended up making more layers than the recipe called for, I did not end up having enough icing to put in between all the layers. I did have enough icing to frost the outside of the cake though, and that surprised me. Next time I make a cake like this, I’m going to make sure I make equal layers and make enough icing for the whole cake.

     After I frosted the whole cake, I put a bunch of blueberries along the bottom, and cut up some blackberries and raspberries to put on the top. I also put the leftover blueberries on the top as well. This was my favorite part, and I did have some of the fruit off of the cake with some frosting.

Here is the finished cake! I never thought that I would be able to make a cake look this nice! I know it isn’t amazing, but for a first try, I am really proud of it.

     If you would like to make a cake like this, here is the recipe I followed: Sally”s Baking Addiction – Vanilla Cake This recipe has a lot of good reviews, but some of the reviews say that the icing was too sweet for them. Next time I make this cake, I think I’m going to make a different kind of icing, such as cream cheese icing so it is less sweet than this vanilla buttercream.

I have always wanted to make a cake that looked this nice. I am so proud of myself and I am looking forward to the cakey progress that I can make in the future.

     I really love making cake, and I also really love decorating them. I have a ton of icing tips that I have barely used that I would love to get into, and I have a bunch of cool ideas for making cakes and decorating them, so there will be more of these coming in the future.      The next recipe that I plan on making are cherry cordials. Even though this recipe does not involve any vanilla, I have craved these for years. Several years ago, one of my mother’s best friends mentioned that she was making these, and I have been curious about them ever since.

     I have decided to make these very soon since I know that I have all of the equipment necessary to make these, and I have wanted them so bad for so long. I have no idea what they taste like, but I love maraschino cherries, so I am super excited to finally make these.

     I will be uploading this post every week to two weeks, since I do not know how fast I can bake new things or how fast the people I know can eat the things I am making! I hope to at least post these on the same day every time I do post one of them, so they will all be on Sundays from now on!

  1. Since I am one of the people who got to try your cake, I have to say it was very good…my friend liked it even better! The finished cake was beautiful! Keep experimenting, and keep us on your list as tasters! Great first cake!

  2. The cake looks amazing I would have no clue its your first time making one like that. I liked how you decorated it the fruit added fresh flavors and the cake was really nice consistency. I dont like vanilla cake too much but I would eat that all the time!
